GARLIC PARMESAN ROASTED POTATOES

Ingredients • 2 pounds red baby potatoes, halved • 1 ½ tosp olive o1l • 1 ½ tbsp unsalted butter • ¼ cup Parmesan, freshly grated • 1 ½ tbsp parsley leaves, chopped • 3 garlic cloves, minced • ¾ tsp dried thyme • ½ tsp dried oregano • ½ tsp dried rosemary • ½ tsp dried basil • ¼ tsp red chili flakes • ¼ tsp black pepper • Salt to taste

Instructions

1. Grease a baking sheet evenly with nonstick spray.

2. Rinse red potatoes, pat dry using a paper towel, and place them in a large mixing bowl.

3. Add garlic, olive oil, dried thyme, basil, oregano, red chili flakes and freshly grated parmesan. Season with salt and black pepper, and toss the ingredients thoroughly to ensure an even coating.

4. Layer the scasoned potatoes evenly on the greased baking sheet, placing them skin-side up for a crisp texture.

5. Place in the preheated oven at 400°F and bake for 25 to 30 minutes, flipping halfway for uniform browning.

6. Melt butter in the microwave, pour it over the baked potatoes, and garnish with chopped parsley. Serve warm.
