CARIBBEAN BOWLS

• 8 boneless skinless chicken tenderloins
• 1 pkg cauliflower rice (1 get green giant frozen riced cauliflower)
• 1 cup white rice (I use instant rice or bens ready rice)
• Jerk chicken seasoning (I like great value Caribbean jerk seasoning packet)
• Diced pineapple (to taste—l use
1/4 cup each bowl)
• Mango salsa or pineapple salsa (any kind)
• optional lime wedges
Vejledning
1. Prepare rice mixture by microwaving both types of rice (cauliflower rice and regular/instant rice) then mix together.
2. Prepare chicken, I like to season both sides with the seasoning packet listed in ingredients and paprika, and air fry on 400, 5 min each side, then take out and let it rest on a cutting board before slicing.
3. Dice fresh pineapple and limes for garnish if you prefer
Assemble 4 tupperware/bowls in this order: -rice mixture, evenly between 4 bowls -add sliced chicken on top (2 tenderloins per bowl) -diced pineapple -mango salsa (to taste) -lime wedge
I love to pack a side of tortilla chips and extra mango salsa to eat with mine!
