Chai-Spiced Roasted Almonds and Cashews

2 cups (276 g) raw cashews
2 cups (286 g) raw almonds
1 tablespoon Chai Masala
1 tablespoon jaggery (gur) or brown sugar
2 teaspoon coarse sea salt
1 tablespoon oil

Set an oven rack at the highest position and preheat the oven to 425°F (22O°C). Line a baking sheet with aluminum foil for easy clean up.
In a deep bowl, combine all the ingredients and mix well until the nuts are evenly coated.
Arrange the nut mixture in a single layer on the prepared baking sheet.
Bake for 10 minutes, mixing halfway through the cooking time to ensure that the mixture cooks evenly.
Remove the baking sheet from the oven and let the mixture cool for about 20 minutes. This step is important. Cooked nuts become chewy, but they get their crunchiness back once they've cooled. Serve immediately or store in an airtight container for up to a month.

I developed this recipe while I was testing my Roasted Masala Nuts. You can get chai just about anyhing else, so why not nuts? It was a perfect pairing, and one that I make regularly now. I love cooking up batches around the holidays. Sealed in pretty pouches, they make a perfect and unique gift.
