Baked Turkey Meatballs

1 lb ground turkey
1 egg
2 tbsp Greek yogurt (plain)
½ cup breadcrumbs (panko or regular)
2 cloves garlic, minced (or 1 tsp garlic powder)
½ small onion, finely grated or minced
1 tsp dried oregano
½ tsp dried basil
½ tsp dried rosemary or thyme (not both, pick one)
¾ tsp salt (adjust to taste)
½ tsp black pepper
Olive oil spray (optional, for browning)
Vejledning
Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil it.
In a large bowl, mix ground turkey, egg, Greek yogurt, breadcrumbs, garlic, onion, herbs, salt, and pepper. Stir until just combined — don’t overmix or the meatballs will be tough.
With damp hands or a small scoop, roll into 1½-inch meatballs. Place on the prepared baking sheet.
Lightly spray or brush the tops with olive oil (optional, helps with browning).
Bake 18–20 minutes, until cooked through (165°F internal temperature).
If you want extra browning, broil for the last 2–3 minutes
Notater
Good on pasta, salads, or rainbow chard with lemon and olive oil!
