Authentic Lebanese Chicken Schwarma

Full recipe:
Chicken + Marinade
1 lb chicken thighs
1 lb chicken breast (pounded thin)
2 garlic cloves, crushed
1/4 cup vegetable oil
1/4 tbsp paprika
1/2 tbsp seven spices
1/2 tbsp cumin
1/2 tbsp white pepper
1/2 tosp ground mastic
6 cardamom pods
3 bay leaves
3 tbsp white vinegar
2 tbsp salt
Zest of 1 orange
Zest of 1 lemon
For finishing
This part is optional and not part of the OG recipe)
2-3 tbsp olive oil
1/2 tosp sweet pepper paste
1/2 tbsp pomegranate molasses
To serve
Garlic sauce (toum brand or cerdars toum are amazing and found in most grocery stores in the
US) + pickles

Prep the chicken (don't skip this)
Pound the chicken breast thin. This is what gives you that shawarma-style texture and helps everything cook evenly.
You can lightly pound the thighs too if they're thick.
Marinate
Add everything to a bowl and mix really well. Chop one onion in half and let it's sit in there.
Cover and marinate at least 4 hours, overnight is better.
Cook
Pan, oven, or grill. Medium-high heat until fully cooked.
Slice
Slice into thin shawarma strips.
Crisp it up (the magic step)
Hot pan + olive oil + sweet pepper paste + pomegranate molasses.
Add the chicken and let it caramelize and crisp at the edges.
Build your wrap
Pita → garlic sauce → chicken → fries → more garlic sauce
Wrap it tight. No forks. No plates. Respectfully.
