Mini Pistachio Baklava

Ingredienser

1 package phyllo dough, thawed

1 stick unsalted butter

1 cup pistachios, salted

3/4 cups raw walnuts

3/4 tsp cinnamon

1/2 cup granulated sugar (or monkfruit)

Syrup

1/2 cup granulated sugar (or monk fruit)

1/2 cup water

1/4 cup honey

1 tsp lemon zest

1 tsp vanilla extract

Vejledning

Make the simple syrup. Add the sugar, water, honey, and lemon zest to a small sauce pan and heat over medium-high heat. Stir. Bring to a boil, then reduce the heat to a simmer, stirring occasionally. Let simmer 5-7 minutes, then remove from heat, mix in the vanilla, and let sit to thicken into a syrup. Preheat oven to 350F. In a small food processor, add the pistachios, walnuts, cinnamon and sugar. Process until combined and the pieces are smaller. Then, scrunch one sheet of phyllo into each muffin cavity. Don’t make them too tight yet. Melt butter and generously brush/spoon butter onto each, letting the butter seep into the cracks. Then spoon 2 heaping tablespoons of the mixture into each, getting inside the cracks. Finish all the mixture. Bake 20-25 minutes until golden and crispy. Remove from the oven and pour syrup on top of each and enjoy! #baklava #easyrecipes
