YUM YUM RICE BOWL

• 6 boneless skinless chicken tenderloins
• 3/4 cup (dry) instant rice
• 1 steamer bag cauliflower rice (I use green giant)
• 1 egg
Sauce: • 3 TBS light yum yum sauce • 3 TBS teriyaki • 2 TBS soy sauce • 1/2 tsp garlic, ginger, pepper
Vejledning
1. Prepare rice mixture by microwaving both types of rice (cauliflower rice and regular/instant rice) then mix together.
2. Prepare chicken, I like to lightly season with seasoning salt, pepper, garlic, paprika, then air fry 400 5 min, each side (let them rest a couple minutes before slicing)
3. Mix sauce ingredients together in a small bowl
4. In a large skillet misted with oil, set heat to medium high heat. Once hot, add rice mixture (best if this is leftover/refrigerated rice but it's fine to use hot too). Spread rice out and let it lightly "fry" then add sauce. Gently mix until combined. Scoot rice to the side and add egg, let it fry then stir it in. You can either add chicken here, OR add exact amount of chicken to each meal prep bowl.
Assemble 3 bowls/tupperware in this order: Fried rice mixture divided evenly amongst 3 bowls 2 chicken tenderloins, chopped/shredded each b drizzle of light yum yum sauce + sesame seeds
