Burrata Caprese Salad

Ingredienser

8 ounces fresh burrata cheese

2 Roma tomatoes, thinly sliced (about 8 slices)

flaky sea salt

fresh ground black pepper

2 tablespoons fresh squeezed lemon juice

2 tablespoons good olive oil

2 tablespoons prepared pesto

1 tablespoon crushed pistachios

1/2 teaspoon dried Italian seasoning

1 teaspoon fresh lemon zest

8 small fresh basil leaves

crostini, for serving

Pull the burrata cheese apart into several pieces and place it on a serving plate. Arrange the tomato slices on top of the burrata. Generously sprinkle with salt and pepper; drizzle the lemon juice and the olive oil; dollop the pesto in several places; sprinkle with crushed pistachios, dried Italian seasoning and lemon zest; and top with basil leaves. Serve with crostini.
