Vejledning

  • Cut eggplant in half and cover in salt for 15-20 minutes

  • Wipe off salt and then season with salt, pepper and olive oil

  • Score eggplant

  • put in oven at 375 for ~20ish minutes until the inside can be scooped

  • Sautee onion until translucent then add garlic, pepper, tomatoes, corn and anything else ya want +s/p

  • Scoop out eggplant and add to pan, sautee until tastes correct

  • Cover with parm and mozzarella or whatever cheese you have 1 bake until golden brown and 400 or whatever feels goooooood
