Apple Almond Baked Oats

Ingredienser

1 tsp avocado oil (or cooking spray of choice)⁣

1 1/2 cups rolled oats⁣

1 cup almond flour⁣

1/4 cup vanilla protein powder ⁣

1/2 tsp cinnamon (not shown, I forgot to add 😉)⁣

1 ½ tsp baking powder ⁣

1 1/4 cups almond milk⁣

1/2 tsp almond extract⁣

1/3 cup maple syrup ⁣

1/2 cup cottage cheese (I used @goodculture)⁣

2 honey crisp apples, sliced thin⁣

3/4 cup sliced almonds⁣

Optional: powdered sugar⁣

Vejledning

Preheat oven to 350F. Brush avocado oil into an 8x8 baking tray (or use cooking oil choice). In a medium bowl, mix together the dry ingredients—oats, flour, protein powder, cinnamon, and baking powder. In another bowl, whisk together the liquid ingredients—almond milk, almond extract, maple syrup and cottage cheese. Pour over the dry ingredients and mix until incorporated. Transfer the mixture to the baking dish and smooth until evenly distributed. Add sliced apples on top, followed by the sliced almonds. Bake for 30-35 minutes then broil for 1-2 minutes so the almonds begin to brown. Remove from oven, then dust with powdered sugar. Cut into squares and enjoy! ⁣
