Mediterranean breakfast tacos

Ingredienser

1 can drained black beans

1 can diced tomatoes

3 cloves chopped garlic

4 eggs

2 tsp chipotle paste

½ tsp dried oregano

S&p

1 tbsp olive oil

Tortillas

Toppings:

Avocado

Jalapeños

Cilantro

Feta or cotija

Olive oil

Lime

Vejledning

1. Gently fry garlic and chipotle paste in oil for 2 mins

2. Add beans, tomato, oregano, and seasoning, mix and simmer 10 mins

3. Make 4 wells in pan and crack an egg into each, cover and cook 5 mins

4. While eggs cook, fold two tortillas and toast in toaster

5. Finish with toppings

6. Dish into warm tortillas and serve
