Finnish Pancake - Pannakakku

Ingredienser

FOR THE PANCAKE

8 eggs

1/2 cup sugar

1-1/4 cups flour

1/2 teaspoon

4 cups milk

salt

1/2 cup butter, divided

RASPBERRY SAUCE

1 cup sugar

2 TablEspoons cornstarch

1 cup water

1 cup fresh or frozen raspberries

Vejledning

In a large bowl or blender, mix the eggs, sugar, flour, salt, milk and 1/2 cup of butter, melted.

Preheat pan then spray with cooking spray or Melt another 1/4 c butter in the bottom of a 9 x 13-inch pan while oven preheats to 400 degrees. Pour the batter into the pan. Bake in the preheated oven for 30 minutes.

Remove from oven and cool for several minutes before cutling into squares (entire dish can be refrigerated and individual portions reheated in the microwave before serving).

RASPBERRY SAUCE

Mix sugar andcornstarch in a medium saucepan. Cook over medium heat. Add water and whisk, stiring constantly until thickened. Remove from the heat; fold in the berries. Serve warm over pancake.

Notater

Tester's Comments: A rich, sweet custard. The flour forms a thin bottom crust. No topping is needed.
