Garlic and Herb Fingerling Potatoes

Ingredienser

1 ½ lb of fingerling potatoes (halved)

1/3 cup of extra virgin olive oil

1/2 tsp of dried oregano

1/2 tsp of dried parsley

1/4 tsp of dried basil

4-5 garlic (shredded)

Salt for seasoning

Fresh parsley and Parmigiano cheese (optional)

Vejledning

Preheat oven to 425 F.

Place halved fingerling potatoes on a line baking tray. Season with salt.

In a small bowl combine olive oil, garlic, oregano, basil, and parsley.

Pour over top potatoes and ensure everything is well coated.

Bake for 45-55 minutes.

Top with fresh parsley and Parmigiano cheese (optional).
