It started with a simple question:

What if a Bellini and a Margarita had a summer fling?

The Bellini brought the velvety peach purée.

The Margarita brought the cocktail template.

The result is bright, refreshing, and way too easy to drink.

Peach & Prosecco Purée

4 peaches, pitted and sliced

375 ml prosecco

175 ml agave syrup (undiluted)

½ vanilla bean, split and seeded

Simmer for 10 minutes. Blend until smooth, fine strain, and refrigerate for up to 2 weeks.

MarBellini Smash

2 oz (60 ml) Volcan Tequila Blanco

1 oz (30 ml) peach & prosecco purée

1 oz (30 ml) fresh lime juice

½ oz (15 ml) agave syrup

1 tsp (5 ml) peach liqueur

Handful of basil leaves

Pinch of salt

Shake with ice until cold. Fine strain over crushed ice and garnish with fresh basil.
