Sweet Potato Nachos

Ingredienser

2 sweet potatoes (I am using Jamaican)

Salt and pepper for seasoning

1/3 cup of olive oil

1 tsp of smoked paprika

1 tsp of chilli powder

1 tsp of garlic powder

1 tsp of onion powder

1/2 tsp of cumin

Salt and pepper for seasoning

Shredded marble cheese

Optional toppings:

Ground beef cooked in taco seasoning

Bell pepper

Tomatoes

Red onion

Olives

Jalapeños

Lime Sour Cream: (can be used to drizzle over nachos)

1/4 cup of sour cream

Juice of a whole lime

3 tbsp of water

Thinly slice the sweet potatoes and soak in ice water for 30 minutes. Pat dry

Coat in seasoning and lay one layer on a baking tray (it’s okay if there is some slight overlapping)

Vejledning

Bake at 425 F for about 25-30 minutes (until crispy). Note: I like to place the oven on broil for an extra 2-3 minutes to ensure crispy potatoes. Watch them carefully to ensure they do not burn!

Add your top or choice and shredded cheese and bake for another 10 minutes or until cheese is fully melted.

Drizzle with sour cream@
