Pecan Shortbread Squares

Ingredienser

Crust:

3/4 cup oil

3/4 cup sugar

1 3/4 cup flour

Sprinkle of cinnamon

Pecan Layer:

1/2 cup vegan butter

1 cup brown sugar

2 tbsp honey

Splash of vanilla

1 3/4 cup pecans

Vejledning

Preheat oven to 350°F.

In a bowl, combine oil, sugar, flour, and cinnamon until a dough forms.

Press dough evenly into the bottom of a lined 8x8 metal dish.

Bake for 25 minutes, until lightly golden.

While the crust bakes, melt vegan butter in a small saucepan over medium heat.

Stir in brown sugar, honey, and vanilla until fully dissolved.

Bring mixture to a boil, then remove from heat and fold in pecans.

Pour pecan mixture evenly over baked crust.

Return to oven and bake an additional 20–25 minutes.

Let cool completely before slicing into squares.
