French Toast

8 thick slices of bread
1 1/2 cups milk
4 egg yolks
4 tbsp dark brown sugar
1/2 tsp cinnamon
1/2 tsp nutmeg (freshly grated)
1/2 vanilla bean, scraped

Set the bread slices on a wire rack set in a rimmed baking sheet. Either set them out the night before and let them stale a bit, or set them in the oven at it's lowest setting for ~10-12 minutes until dry (but not toasted).
Preheat the oven to 275. Set a wire rack in a rimmed baking sheet if you haven't already.
In a large, flat-bottomed bowl, combine the rest of the ingredients, except butter. Whisk thoroughly to combine.
In a large nonstick pan, melt some butter over med heat. Working with 2-3 slices at a time, dunk bread in custard, coat well, then fry in butter.
As each piece is done, transfer to the wire rack on the warm oven to finish, at least 5 min more. Keep the slices in the oven until ready to serve.
