Creamy Chicken Wilde Rice Soup

Ingredienser

3/4 cooked white & wild rice

4 c sodium reduced chicken broth

3/4 c carrots diced small

3/4 c celery diced small

1 clove minced garlic

6 tbsp butter, divided

2 large chicken breasts

1/2 c flour

1 1/2 c milk

1/2 c heavy cream

1 tsp lemon zest

Vejledning

Cook rice. Saute vegetables in 1 tbsp butter, add garlic last 30 seconds.

Add broth, italian seasoning, turn heat to med-high, add chicken & boil in covered pot 12-15 minutes.

Remove chicken from pot, cool.

Reduce heat to low add rice & chicken.

Make roux (5 tbsp butter 1/2 c flour) add to soup.

Cook 5 minutes. Stir in cream, add zest when serving.
