Everything Salmon Bagel Tart! the First in My Series of 5 Si

1 puff pastry sheet

1 egg

2 tbsp everything bagel seasoning (see note in comments!)

165g cream cheese

4 spring onions

3 large tomatoes, thinly sliced

200g smoked salmon

½ red onion, sliced

50g capers

Fresh dill

Lemon wedges, to serve

Vejledning

Preheat the oven to 200°C. Take the puff pastry out of the packaging and let it sit at room temp for 10-15 minutes. Unroll onto a baking sheet and score a frame along the edges. Whisk the egg in a small bowl and brush it evenly over the pastry. Sprinkle with the everything bagel seasoning. Bake for around 20 minutes, until golden and puffed up. This usually takes a bit longer than the packaging suggests — you want the bottom properly browned and crisp.

Finely mince the spring onions and mix into the cream cheese. Season with salt. Whisk in 1-2 tablespoons of sparkling water for a lighter, fluffier texture (regular water works too).

Take the pastry out of the oven. It will probably have domed — press it down gently with a spoon. Spoon the cream cheese mixture over and spread evenly with a knife or pastry spatula.

Top with the sliced tomato and a pinch of salt, then the salmon, red onion, capers, and dill. Season with more salt and pepper.

Serve with a wedge of lemon!
