Spicy Shrimp Cucumber ‘sushi

Ingredienser

2 cucumbers

½ cup cooked white rice

½ lb shrimp, peeled & deveined

½ tsp paprika

½ tsp garlic powder

½ tsp onion powder

⅛ tsp cayenne

Salt + pepper to taste

1 tsp olive or avocado oil

Sriracha Mayo:

3 tbsp avocado oil mayo

1 tsp sriracha (add more to make it spicier)

1 tsp rice vinegar

½ tsp honey

How to:

Vejledning

Toss shrimp with all of the spices, then cook in a hot skillet with oil for 2–3 mins per side.

Stir together mayo, sriracha, rice vinegar, and honey to make the sriracha mayo.

Slice cucumbers in half, then scoop out the seeds to make room for the rice.

Fill with rice, top with shrimp, drizzle with spicy mayo, and top sesame seeds. Enjoy!
