Frappes (aka. Floppes)

2 - whole eggs
2 - egg yolks
1 - cup heavy whipping cream
1 1/3 - cups sugar
1 - lemon (Rind & Juice) Scrap rind to get bits to add flavor to dough
1 - stick of Unsalted Butter
2 - tbsp Platinum Yeast
3 - tsp of Anise Oil
1 - tsp Vanilla
3 - cups of bread flour or more (dough will be slightly sticky for first rise)
Vejledning
• Put eggs, sugar, lemon, Oleo (Melted), Anise and Vanilla into a mixing bowl and blend together.
• Heat milk to a Luke warm temperature (too hot will kill yeast)
• Put yeast into pan and mix with fingers until it is melted
• Put yeast mixture into same bowl as original ingredients and blend.
• Add flour and continue to mix until the dough forms and your hands come clean when handling
• Let the covered dough raise in warm location for at least 60 to 90 minutes
ROLLING: Originally the dough was rolled flat and cut into shoe string lengths and tied into knots
I choose to pinch a ball of dough off roll it into a snake and tie. Then place it on some wax paper to wait for frying
FRYING: Heat grease in 10 inch pan filled approximately 1/2 full. Enough grease to allow the dough balls to float when cooking. Turn burner on to just over 6 on the cooking dial. Cooked 10 to 12 dough balls at a time. As they cook they will float.

Italian Christmas Cookie recipe which has been past down from My Noni (Ameilia Dalpoas) to my mother Pia and now to you. While growing up my Noni Dalpoas lived with us. She baked bread each Monday and a special treat for the family. Floppes was always the treat during the Holiday season. She was a special lady and a wonderful cook.
