Doris Lehodey's Xmas Cake

Ingredienser

lb butter

2 1/2 c sugar

12 eggs

4 c flour

1/2 lb almonds (250 g)

4 pineapple rings

1 lemon - juice & rind

1 orange - juice & rind

2 lbs raisins (1000 g)

1 c apricot nectar

1 lb candied cherries (500 g)

1 tsp almond & vanilla flour

Vejledning

Soak fruit & raisins overnight in juices.

Cream butter & sugar with mixer.

Add 6 eggs, 6 yolks, beat 10 minutes.

Add 1/2 c flour to fruit.

Add 2 1/2 c flour, fruit, juices, & flavoring. Mix.

Fold in 6 beaten whites.

Bake 250 4 hours. Small - 2 to 3 hours. Grease pans & line with well greased paper.
