The Recipe (makes 12):

1½ cups soft medjool dates (225g) — pitted

1 cup raw cashews (140g)

½ cup dark chocolate 70%+ (75g)

Pinch of sea salt (optional)

1️⃣ Blend dates + cashews (+ pinch of salt) until a sticky dough forms.

2️⃣ Roll into 12 balls. Press into a mini cupcake tray.

3️⃣ Use your thumb to press an indent into each one.

Vejledning

Melt dark chocolate and spoon into each cup.

Refrigerate 30 minutes until set. Try not to eat them all at once. 🍫

Tips:

If your dates are hard, soak in boiling water for 20 mins first.

Use 70%+ dark chocolate for the richest flavour.

No cupcake tray? Roll into balls and coat in melted chocolate instead.

Store in the fridge for up to 1 week — or freeze for 3 months!
