I made this for my Healthy Mum group. It lit up Cronometer like a Christmas tree!! It’s designed to be made on Sunday and eaten Mon-Thu lunch. The secret sauce is to eat it cold twice then heat it up the last couple of days. So healthy. Full of nutrients!! And yes, people do take it to the office. Eaten cold
Nutrition - 4 x 500 kcal (38P, 28C, 27F)
150g spinach
250g salmon
400g potatoes
200g tomatoes
100g reduced fat feta
100g Kalamata olives (pitted)
8 medium eggs
400ml milk
Some dill
Pepper
So simple. Throw everything in a baking tray. Mix the eggs, milk, dill and pepper. Pour over the top and slice on some lemon. Bake for 60 minutes at 180C.
BTW I never pre boil the potatoes. I just leave it in the over when I turn it off. That’s said, most of my clients do Pat boil or microwave them first as they don’t like them crunchy like me. I’m eating things like this the next day any how 🙏
