CHICKEN SCHNITZEL WITH AN ASIAN INSPIRED CAESAR ISH SALAD

Schnitzel

1/2 chicken breast, pounded thin

1/2 cup of ap flour

1 egg

1 tsp soy sauce

1/2 cup panko breadcrumbs

1/2 tbsp white sesame seeds

1/2 tbsp black sesame seeds

Salt and pepper

Neutral oil, for frying

Asian Caesar Salad - ish

1 cup of Cos lettuce, chopped

1/2 Cucumber, sliced

1 tbsp Chives, finely sliced

1/4 cup Parmesan, finely grated

1 tbsp fried capers

1 tbsp fried shallots

Dressing

1/2 cup kewpie mayonnaise

1 tsp seeded mustard

1 tbsp Soy sauce

1 tsp Sesame oil

1 tbsp Rice wine vinegar

1 Garlic, finely grated

Juice of 1 lemon

Parmesan crisps

1/2 cup parmesan, grated

Vejledning

Schnitzel

Pound the chicken breast until thin and even.

Set up the crumbing station: season the flour, beat the egg with soy sauce, and mix the panko with the sesame seeds.

Coat the chicken in flour, dip into egg, then press firmly into the sesame panko.

Shallow-fry in hot neutral oil until golden and crisp on both sides. Remove, salt and rest.

Parmesan crisp

Grate the parmesan

Place it in a circle shape on lined baking tray.

Cook in the oven at 180 degrees for 15 min, or until golden. Remove and let cool

Salad

Fry the capers in oil until crisp.

Whisk together the mayonnaise, mustard, garlic, soy sauce, sesame oil, rice wine vinegar, and lemon juice until creamy.

Add the cos lettuce, cucumber, chives, capers, parmesan and fried shallots and toss until well coated.
