Chicken and Leek Pie

Ingredienser

Bacon, optional (4 rashers), sliced

A splash of oil

1 carrot grated

1 leek washed and sliced

2 celery sticks diced

1 rosemary stick, optional – or use any fresh or dried herbs you have!

½ packet mushrooms, sliced

Note: use literally any veggies you have!

2 chicken breasts, 4 chicken thighs, literally whatever chicken you have/like, sliced

3 tbsp flour

1 ¼ cup water or stock

Salt and pepper

2 tbsp crème fraiche, optional

1 ½ sheets flakey pastry

Vejledning

To a pan add bacon and cook until crispy and the oil has rendered out.

Next add a splash of oil, carrot, leek, celery, rosemary, a good pinch of salt and pepper and fry until nice and soft. I like to put a lid on the pan for the first few minutes to help the process.

Next add the mushrooms and cook for another few minutes

Add the chicken, flour and stir until all coated.

Add the water and season again. Simmer for around 20 minutes.

Add crème fraiche if you have it!

You can make individual pies but I like to keep it easy – if you pan can go in the oven, lay over the pastry on top or transfer into an oven proof dish.

Bake at 200 degrees for around 15 minutes or until golden.
