How to Bread. Episode 4 (Brioche Rolls, Babka)

Ingredienser

500g strong white bread flour

200g milk (lukewarm)

100g eggs (2 large)

60g butter (softened)

40g sugar

10g salt

7g instant yeast

Vejledning

Mix flour, sugar, salt & yeast (keep salt/yeast separate). Add milk, water & eggs.

Mix until smooth & elastic (10–12 mins total).

Add butter, one piece at a time. Knead till glossy & stretchy.

Proof 1–1.5 hrs until doubled.

Divide into 8 x 110g balls, shape tight.

Proof again 45–60 mins till puffy.

Brush with egg wash, bake 15–17 mins at 180°C fan till golden.

Cool fully before slicing!
