Pineapple Chutney

1 chopped onion
1/2 tsp curry paste or powder
2 crushed garlic cloves
2 tsp grated fresh ginger
pineapple
3/4 c brown sugar
1/2 c rice or apple cider vinegar
salt & pepper
Vejledning
Saute onion in oil until soft. Add curry paste or powder, garlic, & fresh ginger and cook for another minutes.
Roughly chop a peeled, cored pineapple. Add it to the pot along with brown sugar, vinegar, and a pinch of salt & pepper.
Simmer for 30 minutes m/l, until jam-like.
Makes about 2 cups.
