Spicy Brazilian Coconut Chicken
A creamy, spicy, and flavor-packed Brazilian-inspired dish with coconut milk, tomatoes, and bold spices.
Perfect over rice!
Ingredients:
J 2 lbs chicken thighs or breasts (cut into chunks)
• 1 tosp olive oil
J 1 small onion (diced)
J 3 cloves garlic (minced)
J 1 red bell pepper (sliced)
J 1 tsp paprika
J 1 tsp ground cumin
V½ tsp chili flakes (adjust to spice preference)
1 can (14 oz) diced tomatoes
J 1 can (14 oz) coconut milk
• ½ cup chicken broth
Salt & black pepper (to taste)
Juice of 1 lime
¼ cup fresh cilantro (chopped)

1 Sauté the Aromatics:
Heat olive oil in a pan over medium heat.
Cook onions, garlic, and bell pepper until soft.
2 Brown the Chicken:
Add chicken pieces, season with paprika, cumin, chili flakes, salt, and pepper.
Sear until golden brown (about 3-4 minutes per side).

Simmer:
Pour in diced tomatoes, coconut milk, and chicken broth.
Stir well, bring to a gentle simmer, and cook for 15-20 minutes until thickened.

Stir in lime juice and fresh cilantro.
Serve over steamed rice or with crusty bread.
