1 ½ cups vegetable oil

4 large eggs

2 teaspoons vanilla extract

½ cup buttermilk

3 cups shredded carrots finely chopped again

Filling

½ cup salted caramel sauce optional

Cream Cheese Frosting

1 cup unsalted butter softened

16 ounces cream cheese softened

6-7 cups powdered sugar

½ cup cornstarch

1 tablespoon vanilla extract or paste

1 teaspoon salt
