Apple Butter Recipe

2 ¾ lbs honeycrisp apples (44 oz)
1 tbsp fresh lemon juice (15mL)
⅓ cup water (80mL)
1 tbsp granulated sugar (15g)
⅔ cup dark brown sugar (126g)
1 ½ tsp ground cinnamon (4g)
⅛ tsp ground cloves
⅛ tsp ground allspice
⅛ tsp fine salt
Pokyny
Peel, core, and dice the honeycrisp apples and place in a large pot with a lid or a dutch oven (I recommend weighing your apples after dicing them to ensure that you have the correct amount for this recipe).
Add all other ingredients to the pot and give it a good stir.
Place the pot on the stove over medium/low heat, cover the pot with the lid, and let the apples simmer for 1 hour, stirring halfway through.
Once the apples are soft, remove the pot from the heat and use an immersion blender to blend the apples to the consistency of apple sauce.
Place the pot back on the heat, uncovered, and continue simmering on medium/low for 1-1.5 hours, stirring occasionally, until the apple butter is thick and a rich dark brown color.
Remove from heat, allow it to rest in the pot for ~10-15 minutes, and carefully spoon it into your jars.
*Since this recipe only makes 1-1.5 jars, I did not can/preserve it, however, you are able to can it if you would prefer! If you do not properly can this recipe, the apple butter will last up to two weeks when stored in an airtight container in the refrigerator.
To help the apple butter thicken a bit, I recommend refrigerating it overnight before serving, however, that is not a requirement.
