Gooey Cinnamon Cream Cheese Muffins

For the muffins:

2 cups all-purpose flour

1/2 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1 cup milk

1/3 cup vegetable oil

1 tsp vanilla extract

1 egg

For the cream cheese filling:

6 oz cream cheese (softened)

1/4 cup powdered sugar

1/2 tsp vanilla extract

Topping:

2 tbsp melted butter

1/4 cup brown sugar

1/2 tsp ground cinnamon

Pokyny

Preheat oven to 375°F (190°C). Line a muffin tin or grease it well.

In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.

In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

In another bowl, whisk together milk, oil, egg, and vanilla. Pour wet ingredients into dry and mix until just combined.

Fill each muffin cup halfway with batter. Add 1 heaping teaspoon of cream cheese mixture in the center, then top with more muffin batter.

Mix brown sugar and cinnamon, then sprinkle on top of each muffin. Drizzle a little melted butter.

Bake for 18–22 minutes, or until golden brown and a toothpick comes out clean (avoiding the center cream cheese).

Let cool slightly and serve warm for maximum gooeyness! 😋🧁
