Kjötsúpa (Icelandic Meat Soup)

Ingredience

  • 3L water

  • 4 lb lamb with bone (i.e. shoulder, neck)

  • 1 lb rutabega / turnip, roughly chopped

  • 1 lb potatoes, roughly chopped

  • 0.5 lb carrots, roughly chopped

  • 1/4 lb cabbage, cut into 0.5" strips

  • 0.5 cups rice

  • 1 small onion, small diced

  • 5 tbsp soup herbs

  • 4 bay leaves

  • salt & black pepper

optional:

  • cauliflower

  • leeks

Pokyny

  1. Rinse meat in cold water.

  2. Add water + lamb to pot & boil.

  3. Once boiling, reduce heat to medium-low & simmer. Skim the scum from the top & add salt. Cook for 60 min.

  4. Add rice / barley & soup herbs + bay leaves. Cook on low for 20 min.

  5. Add veggies. Cook for 20 min. Season with salt + pepper.

  6. Serve
