Kjötsúpa (Icelandic Meat Soup)

3L water
4 lb lamb with bone (i.e. shoulder, neck)
1 lb rutabega / turnip, roughly chopped
1 lb potatoes, roughly chopped
0.5 lb carrots, roughly chopped
1/4 lb cabbage, cut into 0.5" strips
0.5 cups rice
1 small onion, small diced
5 tbsp soup herbs
4 bay leaves
salt & black pepper

Pokyny
Rinse meat in cold water.
Add water + lamb to pot & boil.
Once boiling, reduce heat to medium-low & simmer. Skim the scum from the top & add salt. Cook for 60 min.
Add rice / barley & soup herbs + bay leaves. Cook on low for 20 min.
Add veggies. Cook for 20 min. Season with salt + pepper.
Serve
