for the pickles:

2 ea zucchini

3-4 garlic cloves, peeled and crushed

1/4-1/2 onion, peeled and thin sliced

1 tsp pickling spice

1/2-1 tsp red pepper flake

1/2 tsp ground ginger

2 tsp kosher salt

1 cup granulated sugar

2 cups white distilled vinegar
