Lemon Brownie

1 cup granulated sugar,

1/2 cup unsalted butter, melted,

2 large eggs,

1 tablespoon lemon zest,

1/4 cup freshly squeezed lemon juice,

1 cup all-purpose flour,

1/4 teaspoon baking powder,

Powdered sugar for dusting (optional)

Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.

In a mixing bowl, combine the sugar and melted butter.

Add the eggs, lemon zest, and lemon juice, mixing well.

In another bowl, whisk together the flour, salt, and baking powder.

Gradually add the dry mixture to the wet ingredients, stirring until just combined.

Pour the batter into the greased baking dish and smooth the top.

Bake for 20-25 minutes or until a toothpick inserted comes out mostly clean.

Let cool, then dust with powdered sugar if desired and cut into squares.
