Begin by heating about 2 inches of vegetable oil in a sturdy pot or deep fryer to 350F.
While the oil is warming up, prepare the biscuit dough. Flatten each biscuit into a roughly 3-inch diameter circle.
Place a piece of chocolate in the center of each biscuit, topped with a marshmallow.
Encase the chocolate and marshmallow with the dough, pinching the dough together to seal and form a ball. Ensure that there are no openings to prevent leaking while frying.
In a shallow bowl, combine the crushed graham crackers, granulated sugar, and ground cinnamon. Mix well to ensure even distribution of the ingredients.
Once the oil is hot, carefully place the dough balls into the oil, frying in batches to avoid overcrowding and keep a consistent temperature.
Fry each bomb until golden brown, which typically takes about 2 to 3 minutes, turning halfway through to ensure even cooking.
Remove the bombs with a slotted spoon and immediately roll them in the cinnamon sugar mixture.
Allow the bombs to cool slightly on a paper towel-lined plate.
Drizzle with chocolate sauce before serving warm.
