French Lemon Mousse

8 eggs (separated)

1 1/4 cups sugar

1/2 teaspoon kosher salt

Juice and zest of 4 lemons

Optional: whipped cream for garnish

Pokyny

Whisk egg yolks with 3/4 cup sugar, lemon juice, and zest in a double boiler until thick.

Let cool. Whip egg whites with salt and remaining sugar to stiff peaks.

Gently fold whites into lemon mixture.

Spoon into glasses and chill for 2 hours before serving.

Top with whipped cream and lemon zest.
