One-pot No Knead Olive & Rosemary Bread

1 cup plain yoghurt (use dairy-free if vegan)
2 cups plain all-purpose flour
2 tsp baking powder
1 tsp baking soda
3/4 cup chopped green olives
1/2 cup Kalamata olives
1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
1 tbsp apple cider vinegar or lemon juice
Olive oil, for brushing
Seeds, for topping (optional)
Method: (All in One Pot)

Preheat oven to 190°C (375°F). Add everything straight into the pot: yoghurt, flour, baking powder, baking soda, olives and rosemary. Pour the apple cider vinegar directly over the baking soda inside the pot – let it bubble, then mix everything together with a spoon or spatula until a sticky dough forms. Shape the dough inside the same pot into a rustic round loaf. Brush or spray the top with olive oil, sprinkle with seeds if using, cover with the lid. Bake with the lid on for 25 minutes, then remove the lid and bake for another 10–15 minutes and put the lid back on. Let the bread cool in the pot for 10 minutes, then lift out, slice and serve.
