2 eggs
1 package yeast (or 2 tsps instant yeast or 2 ¼ tsps active dry yeast)
7/8 cup warm water (between 100 and 110 degrees)
½ teaspoon salt
1/3 cup sugar
2 TBSP salted butter or margarine, melted
4 cups unbleached white flour
1 egg white whipped (or 1 whole egg whipped)
sesame or poppy seeds, is desired

Dissolve the yeast in the 7/8 cup of warm water. Place all ingredients, except the flour in Kitchenaide mixer. Use bread hook and blend with the flour one cup at a time on the lowest setting (trick if you’re in a hurry: You can add all the ingredients and three cups of flour at once, mix everything, and then add the last cup and finish the dough).
Cover the bowl with plastic wrap, and let rise until doubled (roughly 2-4 hours.)
Punch the dough down and turn it out again onto a lightly floured breadboard. Split in two to make two challot (if you want to add raisins or chocolate chips, do this here). Split each half into three or four parts and braid.
Set the braided challot onto a buttered baking sheet or baking sheet with a silicone pad.
Brush lightly with whipped egg and sprinkle with seeds if desired. Let rise until doubled.
Bake in 325 degree oven for about 27 minutes.
Notes: The bread can be made in the morning, left to rise in a bowl, punched down in the afternoon, and finished by dinner. It can also be made the evening before, placed in the refrigerator overnight, and finished in the morning.
