Creamy High Protein Egg Salad

Ingredience

12 large eggs

2 cups (200 g) cucumber, finely diced

½ cup (80 g) red onion, finely chopped

1 cup (150 g) red capsicum, chopped

300 g high-protein Greek yoghurt

1 tbsp mustard

1 tbsp hot sauce

1 tsp Worcestershire sauce

2 tbsp chives, chopped

Salt + pepper

Pokyny

Boil eggs for 6 minutes, then transfer straight to cold water and peel.

Finely dice cucumber, red onion and capsicum.

Slice eggs in half and remove yolks.

Mash yolks with yoghurt, mustard, hot sauce and Worcestershire sauce until smooth.

Chop egg whites and combine with veggies and chives.

Pour over dressing, mix gently and season to taste.

Creamy. Fresh. High protein. Done.
