Mixed Berries Cheesecake

Ingredience

16oz cream cheese (room temp)

3 eggs

1 cup heavy cream

2 cups sugar

8oz strawberries (halved)

16oz blackberries

Pokyny

In a medium pan over medium heat add strawberries and 1 cup of sugar, cook until juices are reduced and thickened

Blend strawberries with all ingredients except blackberries and the extra cup of sugar

Pour into a 6inch springform cake pan with parchment paper

Place a baking pan in the bottom rack of the oven with 1 inch water

Place cheesecake in the middle of the oven

Bake at 400°F for 40 minutes, cheesecake will be jiggly

Cool and then refrigerate for 6 hours

Repeat the strawberries cooking method with the blackberries and extra cup of sugar, let it cool and top your cheesecake!
