Juice Boba

Makes ¾ cup
Juice mixture:
- 1 cup fruit juice (strained, no pulp – watermelon, mango, lychee, etc.)
- 1–2 Tbsp sugar or sweetener (optional)
- ½ tsp sodium alginate (used in spherification)
- Optional: gel food coloring or flavor extract
Calcium bath:
- 2 cups cold water
1 tsp calcium lactate or calcium chloride (either works)
Tools needed:
- 2 bowls (one for calcium bath, one for water rinse)
- Squeeze bottle, dropper, or syringe
- Fine mesh strainer or slotted spoon
- Bowl of cold water (for rinsing boba)

1. Make the Juice Base
In a blender or bowl, combine:
1 cup strained juice
½ tsp sodium alginate
Sweetener and color (if using)
🌀 Blend well for 1 minute until smooth and slightly thickened. Let sit 15–30 minutes to reduce air bubbles.

2. Prepare the Calcium Bath
In another bowl:
Stir 1 tsp calcium lactate (or chloride) into 2 cups water until completely dissolved.
This will react with the sodium alginate to form the gel membrane!

3. Form the Boba Pearls
Fill a squeeze bottle or dropper with the juice mixture.
Gently drip into the calcium bath—each drop will instantly form into a round ball with a liquid center.
Let each boba sit for 30–60 seconds max. The longer they sit, the thicker the shell.

4. Rinse & Use
Scoop out the boba using a strainer or spoon.
Rinse gently in cold water bowl to stop the reaction and remove excess calcium taste.
