Loaded Fiesta Potato Bowls

4-5 russet postatoes, peeled and sliced
olive oil
onion powder
garlic powder
salt and pepper
chili powder
cayenne pepper
1.5 lbs ground beef
1 yellow onion (3/4 for meat, save 1/4 for topping)
1 package taco seasoning
2 cups water
2 tbsp butter
2 tbsp flour
1 tsp each salt, pepper, chili powder
1 cup milk
8 oz freshly grated mild cheddar cheese
juice of 1 lime
1 Roma tomato, diced
handful cilantro, chopped
salt & pepper to taste
drizzle sour cream

Potatoes:
(add olive oil, onion powder, garlic powder, salt, pepper, chili powder & cayenne pepper) bake at 425°F for 45 minutes flipping every 15 minutes. crank the heat to 450°F and bake another 10-15 minutes until brown and crispy.
Beef:
Add beef to skillet and cook. Remove grease. Add onions and stir before adding taco seasoning. Add water and let simmer
Cheese sauce:
In a separate pot, melt butter. Add flour and mix. Add salt, pepper, chili powder, and milk. Gradually add cheese and mix until desired consistency. Take off heat and let thicken.
In a separate bowl, add chopped onion, tomatoes, lime juice and cilantro.
Assemble as desired, sour cream optional
