30 Days of Slow Cooker Recipes

1 ⅕ kg beef brisket
Sea salt & black pepper
2 tablespoons extra virgin olive oil
1 brown onion, finely chopped
3 garlic cloves, chopped
400g tin diced tomatoes
3 tablespoons tomato paste
⅓ cup red wine
1 cup beef stock
1 tablespoon dried Italian herbs
350g pasta (any kind you like)
To serve:
Grated Parmesan cheese
Fresh parsley
This recipe is:
Freezer friendly
Dump bag friendly - just use 1.2kg diced chuck steak instead of brisket. Throw it all into the slow cooker (no searing) and cook as per recipe.
Oven friendly: follow recipe and sear off beef. Add all ingredients to a large oven safe pot. Lid on and cook for 4 hours at approx 140-150 degrees.
