Traeger Day Deliciousness = Smoked Lamb Shanks with Quick Pi

Lamb
4 lamb shanks
2 tablespoons minced rosemary leaves
3 garlic cloves, minced
1 tablespoon smoked paprika
Zest of 1 lemon, grated on a microplane
1/4 cup olive oil
Sea salt and cracked black pepper
Apple juice, for spritzing
Potatoes
4 pounds potatoes, peeled and cubed
200 grams duck fat
2 tablespoons minced rosemary leaves

Pickles
1 large English cucumber (or several mini ones)
1 cup white wine vinegar
1/2 cup boiling water
1/3 cup sugar
Fresh mint, feta cheese, lemon wedges, and pita, to serve

Preheat your Traeger Grill to 225 degrees F and crank on that super smoke option if available.
In a small bowl, combine the rosemary, garlic, paprika, lemon zest, olive oil, season well with salt and pepper, then coat the lamb entirely with the rub. Place on the grill and smoke low and slow, spritzing every hour or so with apple juice, until they’re golden, juicy, fall-off-the-bone perfection, about 4 to 5 hours.
Par cook your potatoes in salted water until just about fork tender. Place the duck fat on a sheet tray and melt on the grill. Add the potatoes to the hot pan, season with salt, add the rosemary, then gently toss to coat well. Place on the grill and cook, turning halfway through, until golden and crisp, about 45 minutes.
Pickle time. In a bowl, combine the white wine vinegar and sugar, then stream in the boiling water until the sugar is mostly dissolved. Add the pickles, mix to coat, then set aside.
Plate up your lamb, potatoes, and pickles with tzatziki, feta, lots of fresh mint, lemon wedges, and serve with pita. Delicious! Happy Traeger Day Everyone!
