One-Pot Spiced Lentil Stew (Vegan & Gluten-Free)

Ingredients:

•1 tablespoon olive oil or coconut oil

•1 medium onion, diced

•3 cloves garlic, minced

•1 tablespoon ginger, minced

•1 large carrot, chopped

•1 tomato, chopped (or ½ can diced tomatoes)

•1 cup dried lentils (brown, green, or red)

•1 teaspoon ground cumin

•1 teaspoon ground coriander

•½ teaspoon turmeric

•½ teaspoon smoked paprika

•Pinch of cayenne or chili flakes (optional)

•4 cups vegetable broth or water

•Salt and pepper to taste

•Juice of ½ lemon or 1 tablespoon vinegar

•Optional: a handful of spinach or kale, stirred in at the end

🍳 Instructions:

1.Sauté aromatics:

•Heat oil in a large pot. Add onion and sauté until soft, about 5 minutes.

•Add garlic, ginger, and spices. Cook for 1–2 minutes until fragrant.

2.Add vegetables and lentils:

•Stir in carrot, tomato, and lentils. Cook for a minute to coat in spices.

3.Simmer:

•Pour in the broth. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, until lentils are tender and stew thickens. Add more water if needed.

4.Finish:

•Stir in lemon juice (or vinegar) and greens if using.

•Taste and adjust seasoning with salt, pepper, or more spices.

5.Serve:

•Enjoy hot with rice, naan, pita, or crusty bread.

🔄 Variations:

•Use red lentils for a quicker-cooking, softer stew (15–20 mins).

•Add coconut milk for a creamier, richer dish.

•Add sweet potato, zucchini, or bell peppers for more veggies.

•Top with yogurt, cilantro, or toasted seeds.
