The Cheesiest Baked Potato Casserole You’ll Ever Make

Ingredience

1lb of Yellow potatoes

1lb of Red potatoes

1lb (1 packet)Uncle John’s Small Batched Hot Smoked Sausage @unclejohnssausage

1 cup of Heavy cream

12oz Cheddar cheese (save 4 oz for topping)

12oz Mozzarella cheese

1/2 cup of Green peppers

1/2 cup of Red peppers

1/2 tbsp of onion powder

1/2 tbsp of garlic powder

1 1/2 tsp of salt

1 tsp of paprika

1/2 tsp of pepper

Parsley for topping

1)Prep all your veggies (chop onions, red bell peppers, green bell peppers, slice potatoes and sausage)

2)Sear the sliced sausage until dark and golden at medium heat. Then remove from pan.

3)In the oil left behind sauté the onions, red and green bell peppers and add in all the seasonings.

4)Add in the heavy cream and bring the heat down to low and add in the freshly grated cheese (8oz of each, leave the other 4oz for topping at the end). Mix until well combined.

5)Then mix in some of the sausage (leave some for topping at the end)

6)Add the potatoes into a casserole dish and spread the creamy/cheesy sauce over it. Mix until all potatoes are covered.

7)Top off with the remaining cheese and sausages. Bake at 450 for 1hr and 30 min (or until potatoes are fully cooked)

Note: Depending on how thick you slice the potatoes, the cook time will vary along with the size of the casserole dish.
