Poke Bowl Peanut Butter sauce

½ cup dry quinoa

2 ½ cups edamame beans

2 cups shredded red cabbage

2 cups chopped baby spinach

1 cup shredded carrots

½ cup roasted peanuts

1 sliced jalapeño

Lime wedges

Fresh cilantro

Dressing:

2 tbsp peanut butter

2 tbsp white vinegar

1 tbsp soy sauce

1 tbsp maple syrup

3 minced garlic cloves

1 tsp minced ginger

½ tsp chili flakes

2 tbsp water

Pokyny

Cook quinoa according to package instructions. Set aside to cool.

Prepare the dressing by mixing all the ingredients in a small bowl.

Roast your peanuts in a skillet for a few minutes.

Chopp up all the ingredients for the salad, and assemble. Enjoy!
