Cheesy Baked Quinoa and Turkey Casserole

1 cup quinoa, rinsed

2 cups low-sodium chicken broth

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 pound ground turkey

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with olive oil.

In a medium saucepan, combine the quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the broth is absorbed. Remove from heat and let it sit covered for 5 minutes.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened, about 3-4 minutes.

Add the ground turkey to the skillet, breaking it up with a spoon. Cook until no longer pink, about 5-6 minutes. Stir in the oregano, paprika, salt, and black pepper.

Add the diced tomatoes to the skillet and cook for another 2 minutes, stirring occasionally.

In a large mixing bowl, combine the cooked quinoa and the turkey mixture. Stir well to combine.

Transfer the mixture to the prepared baking dish. Sprinkle the cheddar, mozzarella, and Parmesan cheeses evenly over the top.

Sprinkle the breadcrumbs over the cheese layer.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the top is golden brown.

Remove from the oven and let it cool for 5 minutes before serving.
