Prepable Lunches Honey Peanut Crunch Slaw

I love this salad. It’s crunchy, salty, sweet, filling and just everything you want a good salad to be. It’s also ideal for prepping as cabbage and carrots keep their taste and will hold without going soggy. Toss everything together in one bowl and serve. swap out the protein to suit your preferences.
Fresh, vibrant, and full of gut-feeding fibre to keep me sustained and my microbes well fed.
You will need to serve 2
1/2 small white cabbage, shredded
2 carrots, julienned (or peel using a speed peeler)
1/2 red onion, thinly sliced
4 tbsp edamame (I buy frozen!)
200g shredded chicken breast (or swap to any other protein you like)
2 tbsp fresh chopped coriander
For the dressing
1 tbsp runny peanut butter
1 tbsp soy sauce
1 tbsp rice vinegar
1 heaped tsp honey
1 tsp ginger paste
Shed the cabbage, carrot and red onion. Place into a bowl, season with a pinch of salt, and massage together. Add in the chopped coriander, edamame, and shredded chicken.
I drizzle all the dressing ingredients in one bowl and toss to combine; however, if your peanut butter isn’t is runny, I would advise against this.
Serve immediately and store leftovers for up to 3 days.
